Banana + coconut cheat ice cream

I've been wondering how I can twist up the banana, tahini and sea salt ice cream I made recently. Turns out coconut and peanut butter are good pairings too.
I love using sea salt flakes for a sweet salty vibe. Really brings out the flavour. So good! Try to use flakes (lightly crushed between your fingers) rather than table salt.

Popped into my local shop and they gifted me some overripe bananas. Best next step?
Peel and freeze bananas, and buy creamed coconut to make ice cream! (The coconut kefir milk is for tomorrow's smoothie)

First step. Peel, chop and freeze your bananas 2 hours in advance.

Now your bananas are frozen and you're ready to start, put creamed coconut into a bowl and about 5-6 tablespoons of warm water. Stir to dissolve.

Place creamed coconut into a food processor with frozen bananas, peanut butter and sea salt.

Blitz until smooth. The banana will break into little clumps first.

Keep stopping to scrape down the sides until smooth and creamy.

Toast dessicated coconut in a dry frying pan over a medium-low heat until golden. Stir often.

Serve ice cream in bowls with toasted coconut on top.

Now try this variation with tahini and dates.
