Sumac Khagina for Breakfast

An interesting twist by me to the usual Khagina or Anda Bhurji for Breakfast. With the addition of Sumac, it not only looked great but also tasted awesome. As Sumac is little bit on the tangy side, not that much as a Lemon but just a little sour. And because of this, it became more flavourful and aromatic.
With any Indian Bread it would taste just as delicious. I use this Middle Eastern spice blend in a variety of innovative dishes. And trust me friends, it's definitely worth a try.
My family and friends love this dish.
Breakfast idea couldn't get any better than this. Trust me on this one when I say. Try it for yourselves and your families to relish it's superb taste and texture as well as it's aromatic flavours.
It's a perfect one for a delightful Brunch too.

Heat oil in a pan and saute the onions. Add the ginger garlic paste along with the other spices and saute the onions very well until light pink in colour.

As soon as the raw smell fades away, break the eggs one by one into it. Immediately start stirring and mixing it well so that it is evenly combined. Now add the star ingredient to it which is Sumac here. Mix it up well.

Cover and let it cook on a low heat for the next 5 minutes. Garnish with lots of coriander and serve hot with Chapatis or even Parathas. Enjoy!
