Hyderabadi Khagina with Thyme

An innovative twist by me to the famous Hyderabadi specialty dish for Breakfast with the addition of Thyme to it. Thyme or Za'atar as known in Arabic is a popular Middle Eastern Herb or spice blend used in Mediterranean and Middle Eastern cooking. It's actually a mix of Sumac, toasted Sesame Seeds, Salt, Cumin, Oregano, and dried Thyme.
It tastes amazing and is used as a Condiment in the Middle East. It is not actually a fine powder but is a bit coarse and this is what makes it unique.
It peps up any dish. I too use it in many dishes. Many of them are instant idea that pops up in my mind when I think of what to cook for the meals.
There are many recipes of mine with Thyme on this platform and this one is an addition to them.
With Thyme added to it, this Khagina or Anda Bhurji tasted amazing. It goes very well with any Indian Bread and is a great choice for Breakfast on any given day.

Steps

Heat oil in a pan and saute the onions. Add the ginger garlic paste along with the other spices and saute the onions very well until light pink in colour.

As soon as the raw smell fades away, break the eggs one by one into it. Immediately start stirring and mixing it well so that it is evenly combined. Now add the star ingredient to it which is Thyme or Za'atar here. Mix it up well.

Cover and let it cook on low heat for the next 5 minutes. Garnish with lots of coriander and serve hot with Chapatis or even Parathas. Enjoy!
