Dhaba-Style Egg Bhurji

Gather all the ingredients for the egg bhurji. Finely chop the onions, green chilies, and ginger.

Heat ghee or butter in a pan. Add the chopped onions and sauté lightly; do not over-fry. Add the green chilies and ginger, and sauté for 1 minute. Meanwhile, crack the eggs into a bowl.

Beat the eggs well. The more you beat the eggs, the fluffier the bhurji will be. Once well beaten, add salt and beat again. Pour the eggs into the pan with the sautéed onions.

Keep stirring continuously to break the eggs into small pieces. If you stir only occasionally, the pieces will be larger. Add red chili powder and black pepper, and cook for 2 more minutes. The bhurji is now ready. Add chopped cilantro and stir once more.

Transfer to a bowl, garnish with more cilantro, and serve hot with bread, roti, or paratha.
