Steps

Place a pot or large pan on heat, add some vegetable oil and allow to heat.

Add onion and fry until translucent.

Add ginger and garlic pastes, scotch bonnet and thyme and stir to combine.

Add the beef and mix well.cook until it turns light brown in color.

Add the salt, seasoning, curry powder, potatoes and carrots and mix.

Add some water enough to cook the mixture.

Cook until the water dries out completely.gently sprinkle the flour and mix.

Remove from heat and allow to cool.

Gently add water to make a Dough.

Knead for about 3 mins then cover to let it sit, for at least 10 min.

Divide the dough into sizeable balls, roll out each dough flat

Add the filling at the middle,apply beaten egg at the edge,close and press with a fork. You can also use a pie cutter, as I did.

In a bowl add the flour, baking powder, salt, sugar, eggs and butter and mix with your hand.

Arrange the pies on a lined baking tray, egg wash and bake in a pre heated oven on low heat, until brown in color.
