Ingredients

1 hour 30 minutes
3 people
  • 6Quail breasts
  • 1 cuprice of choice
  • 1 canCream of mushroom soup
  • 1 1/4 cupswater
  • 1 cupFrozen broccoli florets
  • 6 slicesbacon
  • Oven instructions
  • Heat oven to 350* if using a confection oven cook for 1 1/2 hrs, regular oven 2 hrs. Cook until the internal temperature of meat is 165* check the breasts with a meat thermometer

    Very important!! Soak quail breasts in a bowl of milk for 24 hours in the refrigerator to tenderize.

  2. 2

    After 24 hours of soaking breasts remove from refrigerator and remove breasts from bowl and place them on a paper towel and pat them dry.

  3. 3

    Once they are dry. Lightly rub down each breast with olive oil and sprinkle with your favorite seasoning.

  4. 4

    Then wrap each breast with bacon and set aside.

  5. 5

    In a baking dish - place 1 cup of dry rice and frozen broccoli and spread out evenly.

  6. 6

    In a small bowl - mix together the 1 can of Cream of mushroom soup and 1 1/4 cups of water.

  7. 7

    Now to bring it all together! Pour the soup and water mixture over the dry rice and frozen broccoli then place the quail breasts on top of the rice and broccoli.

    Do not cover while cooking!!
