Soak kale channe in 3 cups of water for overnight. Pressure cook with the same water and 1/2 teaspoon salt.

In a wok, add oil and heat till it smokes. Turn off the flame. Let it rest for 2-3 minutes.

On a low flame, add cumin seeds and saute them till it crackles. Now add coriander powder, chana masala, garam masala, and dry mango powder and sprinkle a dash of water. Keep stirring.

Add red chilli powder and stir.

Add boiled kaale Channe and give them a slight mash. Check salt. Add if required. Give everything a nice stir and cover cook for 5 minutes on low flame.

Sookhe Kaale Channe is ready to Serve.
