Almond, Orange, and Coconut Cake🥥🍊

Orange cake is one of our favorites. We often make it for snacks, and my daughter even takes it to school for breakfast some days, as it makes quite a lot. This time, I modified the usual recipe by adding almonds, shredded coconut, and two whole oranges instead of one. It was a great decision because it tastes even better, and the texture is both fluffy and moist. Simply spectacular, the photos speak for themselves, and I'm already craving another piece... First, blend the well-cleaned, seedless oranges with the eggs, almonds, oil, and butter. You can use a kitchen robot, but an immersion blender works well for me. Next, gradually add the flour (mixed with the sugar and baking powder) by sifting it in slowly; use the blender with the whisk attachment for this. Once all the ingredients are well combined, add the shredded coconut and stir a bit more before pouring the mixture.

For baking, we chose a silicone mold about 11 inches in diameter, which is ideal for easy removal without needing to grease it with butter. With the oven preheated to 400°F, bake for about 45 minutes, until the top is nicely browned. Tip: For the last 15 minutes of baking, place a piece of aluminum foil over the cake to prevent the surface from over-browning. Much better.

And it's ready. Once out of the oven, let it cool at room temperature before removing it from the mold.

Decorate with more shredded coconut on top and enjoy this wonderful and super tender homemade cake. Enjoy everyone.
