During Navratri craving for variety of food is high so Buckwheat Dosa is one such way to enjoy Dosa with a hot & spicy coconut chutney
Steps

For Dosa Batter - in a bowl add Buckwheat flour, Dahi, rock salt, water, oil and whisk well, set aside for 10 mins

For Filling - in a bowl add boiled grated potato. In a pan heat oil, add cumin seeds, add chopped ginger, chopped green chillies, curry leaves and stir for 2 mins. Add grated boiled potato and rock salt and toss well, set aside

For Dosa - heat Dosa tray and add a ladle of the batter, slide all sides and drizzle the oil from the side and the top. Let the Dosa set for 1 min, add the filling in the side and fold the Dosa into half, fry for 1 min and set aside. Complete the batches

For Coconut Chutney - in a blender add grated coconut, mint leaves, curry leaves, coriander leaves, cumin seeds, chopped ginger, chopped green chillies, rock salt and water. Blend smooth and set aside. Chutney is ready
