Ingredients

30 minutes apr
cuts 10 slices
  • For the rich pastry
  • 2small egg yolks beaten
  • 175 gplain flour
  • Pinchsalt
  • 60 gbutter
  • 50 gvegetable fat. I used tbsp of oil
  • For the filling
  • 125 gbutter melted
  • 125 gcaster sugar
  • 125 gground almonds
  • 2large eggs beaten
  • Few drops almond essence
  • 2 tbspseedless jam
  • For the icing
  • 125 gicing sugar
  • 6-8 tspfresh lemon juice or squeeze jif
  • 25 gtoasted flaked almonds. I used pine nuts

Steps

30 minutes apr

    Pre heat the oven 200 c

    Place flour and salt in a bowl, rub in the butter and oil or fat until it becomes breadcrumbs.

  3. 3

    Add the eggs with sufficient water to make a soft, pliable dough.
    Knead lightly on a floured board then chill in fridge for 30 minutes.
    Roll out pastry and put in lined loose bottom flan tin.

    Spread some jam on uncooked pastry.

  5. 5

    For the filling. Mix together the melted butter, sugar, almonds and beaten eggs and add a few drops of almond essence. Then spoon the mixture on top of the jam.

    Bake in oven for 30 minutes until firm or golden brown.
    Allow to cool.

    When the tart is cold make the icing by mixing together the icing and lemon juice until smooth.

    Spread icing over flan and scatter almonds.
