I had some homemade redcurrant jam in the fridge that I had made, and having been in keto for a while I thought I'd give this a go.

I had some homemade redcurrant jam in the fridge that I had made, and having been in keto for a while I thought I'd give this a go.

Pre heat the oven 200 c

Place flour and salt in a bowl, rub in the butter and oil or fat until it becomes breadcrumbs.

Add the eggs with sufficient water to make a soft, pliable dough.
Knead lightly on a floured board then chill in fridge for 30 minutes.
Roll out pastry and put in lined loose bottom flan tin. - 4
Spread some jam on uncooked pastry.

For the filling. Mix together the melted butter, sugar, almonds and beaten eggs and add a few drops of almond essence. Then spoon the mixture on top of the jam.

Bake in oven for 30 minutes until firm or golden brown.
Allow to cool. - 7
When the tart is cold make the icing by mixing together the icing and lemon juice until smooth.

Spread icing over flan and scatter almonds.
