Peel and crush the garlic; chop the onion; cut the chicken thighs into bite-sized pieces; cut the carrot into small pieces; cut the potatoes into slightly larger pieces than the carrot; cut the broccoli into small florets, and trim and separate the shimeji mushrooms for later use.

Melt the butter over low heat, add the cake flour and mix with a whisk, add the milk and continue stirring until there are no lumps of flour, cook into a thick white sauce, then immediately turn off the heat and set aside.

Pour 2 teaspoons of oil into a pot, sauté the onion and garlic cloves until fragrant, add the chicken pieces and cook until the surface changes color slightly, then add the potatoes and carrots and stir-fry.

Add water and bring to a boil over medium heat, then reduce to medium-low heat.

Cook until the carrots are fully cooked and the potatoes are almost done, then add the broccoli and shimeji mushrooms.

Once the broccoli is cooked through, add the white sauce and mix well. Finally, add salt and black pepper to taste, mix well, and it's ready to serve!
