A beautiful dish from a very beautiful place in Jammu and Kashmir. Kashmiri dum aloo is one of the most widely loved North Indian curries. This recipe is very favorite of my kids. Because my children love potatoes very much.. even if fried potatoes are made as a vegetable, they are tempted to eat them. This vegetable has baby potatoes fried in oil and then cooked with a delicious curd gravy and flavored with Kashmiri red chillies, dry ginger powder and fennel powder. This kashmiri dum aloo tastes really good with curd gravy.

Because my children love potatoes very much.. even if fried potatoes are made as a vegetable, they are tempted to eat them. This vegetable has baby potatoes fried in oil and then cooked with a delicious curd gravy and flavored with Kashmiri red chillies, dry ginger powder and fennel powder. This kashmiri dum aloo tastes really good with curd gravy.

First of all, wash the baby potatoes with water and peel them. And prick this raw potato with a fork.

Now heat oil in a pan and half fry these baby potatoes on slow gas flame. Then cool these potatoes.

Now prick these half fried baby potatoes again with a fork and fry again in hot oil on medium to slow gas flame.

Then take curd in a bowl and add fennel powder, dry ginger powder and Kashmiri red chilli powder to it and mix well to make a paste.

Now heat oil in a pan, add big cardamom, cinnamon stick, Shahi jeera and asafoetida, mix well and saute. After that, add garlic and ginger paste to it, mix well and saute.

Now add the prepared curd paste to this, add Kashmiri red chilli powder and water, mix well and cook on high gas flame.

After that, add salt to this and mix well, when oil separates and comes to the top, add fried baby potatoes and cook for 10 minutes on low gas flame. Then turn off the gas flame and add green coriander leaves 4 ii you my ownand mix well.

Now our yummy kashmiri dum aloo is ready to serve. Garnish this Dum Aloo with green coriander leaves and serve with rice, paratha, roti, salad and buttermilk.
