I'm excited to share this recipe, which is my own version inspired by the famous 'pirata' tacos well-known in Monterrey. I wanted to make a gordita version—both are delicious!

To prepare the meat and seasoning:
Heat a skillet. Cut the beef into small cubes, cover, and let it cook over medium heat in its own juices until partially cooked. - 2
Meanwhile, chop one onion and blend it with 2 1/2 tablespoons black pepper, one garlic clove, the olive oil, salt to taste, and blend until smooth.

Once the meat is partially cooked, add the blended seasoning and stir. Cook uncovered until the mixture dries out and the meat browns slightly, about 20 to 25 minutes.

To prepare the dough for the gorditas:
Heat the water. In a large bowl, add the flour, baking powder, salt to taste, lard, and butter. - 5
Mix until crumbly. Gradually add the hot water and knead for about 15 minutes. Place the dough in a bag to rest while the meat cooks.

Grate the asadero cheese, and chop onion and cilantro to taste.

To make the flour gorditas:
Form small dough balls (any size you prefer). Flatten each ball, place grated cheese in the center, fold the dough over the cheese, and roll out with a rolling pin. Cook on a hot griddle or skillet. - 8
Once flattened, cook on the griddle for 2 to 3 minutes per side, making sure they don't burn. When they puff up, they're ready.

Split open the gorditas and fill them immediately so the cheese doesn't stick. Repeat with the rest.
