Garlic Chilli Sardine Spaghetti

Canned Fish are essential items for me. I always stock some Canned Tuna, Mackerel, Salmon and Sardines. It seems Canned Sardines are the least popular, but you can make many delicious dishes with them. I most often make Rice Bowl dishes such as ‘Canned Sardines Rice Bowl’. This dish is very similar, but it’s a Spaghetti dish. Cheap, quick and easy, and so yummy.

Ingredients

1 Serving
  • 1serving Spaghetti
  • 1 can(*110g) Sardines in Olive Oil
  • 1small clove Garlic *crushed or minced
  • Chilli Flakes as required
  • 1 tablespoonSake (Rice Wine) *OR Mirin for slightly sweet flavour
  • 2 teaspoonsSoy Sauce
  • 1 handfulBaby Spinach
  • Finely chopped Spring Onion
  • Shichimi (Japanese Chilli Spice Mix) OR Ground Chilli

Steps

  1. 1

    Cook Spaghetti in boiling salted water according to the instruction on the package.

  2. 2

    Empty the can of Sardines into a frying pan, add Garlic, Chilli, Sake (OR Mirin) and Soy Sauce.

  3. 3

    When Spaghetti are nearly cooked, heat the frying pan over high heat, and cook for a few minutes. Then add Baby Spinach and drained Spaghetti, and gently mix to combine.

  4. 4

    Add some finely chopped Spring Onion and Shichimi (Japanese Chilli Spice Mix), and enjoy.

One thing I never buy is Mentsuyu. Store-bought Mentsuyu doesn't taste good to me and it contains additives. Do you know 'Katsuobushi' (Bonito Flakes)? You can easily make Mentsuyu with Katsuobushi, Soy Sauce and Mirin.
