This recipe is from a dear older lady that I met at church when hubs & I were just married. She was a tad crotchety, but she could cook! This is one of her “just thrown together” dishes. It can be made into a ball or served in a “pretty bowl”

Ingredients

  1. 1 cancorned beef, crumbled
  2. 1 (8 oz)cream cheese, softened
  3. 1/4 cbell pepper, your choice of color
  4. 1/4 conion, minced
  5. 1-2 Tbspmayonnaise
  6. Crumbled pecans, enough to roll ball in

Cooking Instructions

    Using electric mixer, (cuz why work harder by hand stirring”. Blend beef & cream cheese we’ll

    Add bell pepper & onion, blend well. Mixture will be stiff. Make a ball and roll in pecans. Wrap in plastic wrap and refrigerate for 4 hours, overnight is best.

    If you’re pushed for time, add mayo to “loosen” it up and serve in a pretty bowl as a dip. Best if allowed to rest in fridge until ready to serve.

    Add more mayonnaise for finger sandwich spread.

I love to bake sweet stuff, with a bit of savory tasty cooking thrown into the mix. Just good ol’ southern cuisine. Most of my recipes were handed down from my Great & Grand Grannies. If they didn’t grow it or raise it, it wasn’t eaten. My hubby and I have alot of food allergies so it gets challenging sometimes to make things that we both can eat. Neither of us can eat shellfish, which is sad, considering where we live, cuz it’s everywhere! Y’all won’t find any shellfish /saltwater fish recipes here. Some fresh water fishes, maybe. Hope y’all enjoy my recipes!
