Ingredients

Serves 4 servings
  1. 1zucchini
  2. 1large carrot or 2 small ones
  3. 1large potato or 2 small ones
  4. 1 cuppeas
  5. 1onion
  6. 1 clovegarlic
  7. 1 2/3 cupscoconut milk (about 400 ml)
  8. 2 cupsrice
  9. 2 tablespoonsRas el Hanout

Cooking Instructions

    Chop the garlic and onion, and cook them in a pot over low heat.

    Cut the potato, zucchini, and carrot into small cubes. Add the vegetables to the pot and cook over medium heat for a couple of minutes.

    Add salt to taste and the Ras el Hanout. Sauté over medium heat for 3 minutes.

    Cook the rice in another pot with boiling water.

    Pour the coconut milk and peas into the vegetable pot, and bring to a boil over medium-high heat.

    Once it boils, reduce the heat and cook for about 20-25 minutes, until the vegetables are tender. Serve with the rice and enjoy!
