Arakas--Greek Potato and Pea Stew

This is a traditional Greek dish; fragrant peas & potato stew seasoned tempered with sauteed onions, tomato paste, herbs and spices. It's one of my favorite go to autumn & winter dishes! One of my shortcuts is to microwave the potatoes. I make this rustic style, using baby potatoes, and I leave on the skin. Drizzle with lemon juice and enjoy as a side dish or as a main course with feta cheese and bread.

Ingredients

about 30 min
4 servings
  1. 1 lbpackage frozen peas
  2. 6-8baby potatoes (peeled if preferred)
  3. 1/4 cupplus 2 tablespoons of tomato paste
  4. 1medium onion
  5. Oil for sauteeing onion
  6. Water to cover sauteed onions
  7. 2-3 tbspsdried dill & a handful of chopped mint if desired
  8. Lemon juice to taste
  9. Salt and pepper to taste

Cooking Instructions

    Brush or spray pan with enough oil to sautee onions. Chop onions and sautee 5 minutes

    Add just enough water to cover onions. Stir & simmer a few minutes. Add peas & tomato paste. Stir again. Add dill, pepper and salt. Simmer 5 min or so.

    While peas and onions are simmering, wash, dry & then pierce & microwave potatoes for 3 to 5 minutes. They should be cooked enough that you can slice in quarters without them being mushy. Steam them on the stovetop if preferred.

    Remove potatoes from microwave; cut in quarters
    Add to pea & onion mixture
    Stir to combine; simmer til hot thru and thru and liquid is thoroughly reduced to a stew like consistency. Drizzle with lemon juice and even a touch of olive oil if you like serve warm.
