Firstly, in a large Kadai heat oil, saute garlic and chili, onion and capsicum for a minute.

Keep the flame on low and add spices and salt. Saute on low flame until spices turn aromatic.

Add boiled and mashed potatoes, and mix well until the spices and potatoes are well combined.

Add coriander and mix well. Aloo masala ready.

To prepare toast, brush butter over one side of both pieces of bread.

On the other side of both bread spread 1 tsp of green chutney.

Top with 2 tbsp of aloo masala and cover with another bread.

Toast the bread from both sides until the bottom turns crisp and golden brown.

Cut the bread in half. Spread 2 tsp of onion, tomato, and coriander. Continue to top with tamarind chutney and pinch chaat masala.

Finally, top with sev and enjoy a Bombay masala sandwich.
