Ingredients

20 minutes
4 servings
  1. 1 cupFine Semolina
  2. 2 tablespoonsJowar flour
  3. 2 tablespoonsBajra flour
  4. 1/4 cupRice flour
  5. 1 cupCurd/ Vegan Curd/ Coconut curd
  6. 1/2 cupGrated carrots
  7. 1/4 cupBoiled mashed green peas
  8. 2 tablespoonsChopped spinach
  9. 1 tablespoonGrated cabbage
  10. 4Chopped green chillies
  11. 1 smallChopped onion
  12. 1 tablespoonGinger garlic paste
  13. 1 tablespoonChopped green coriander leaves
  14. 1 tspCumin powder
  15. 1 tspChilli powder
  16. As Per TasteSalt
  17. 1 tspSugar
  18. 1/2 tspBaking soda
  19. As RequiredGhee 1 tablespoon+ 2 tablespoon to grease the appe pan

Steps

20 minutes
  1. 1

    First, take all the flour in a deep wide bowl. Then add the vegetables. Whisk the curd with 1/2 cup water. (You can add the juice of one lemon if making it VEGAN). Adjust water according to lemon juice. Slowly add to the mix of flour and vegetables.

  2. 2

    Add till you have a thick but pourable consistency. Then mix in all the spices, salt and sugar.

  3. 3

    Keep the appe pan or Paniyaram Chetty to heat. Grease with ghee all over.

  4. 4

    Then mix baking soda, ghee, and a tablespoon of water into the batter, and whisk well. Add spoonfuls of mix to the molds. Sprinkle some ghee on each cup. Then cover and cook till the base is golden.

  5. 5

    Flip with a wooden stick or fork. Coo the tops too till golden. Then transfer to a cloth-lined hot box.
    Serve with coconut chutney/ spiced yogurt or good old tomato ketchup. Enjoy a healthy breakfast!
