First, take all the flour in a deep wide bowl. Then add the vegetables. Whisk the curd with 1/2 cup water. (You can add the juice of one lemon if making it VEGAN). Adjust water according to lemon juice. Slowly add to the mix of flour and vegetables.

Add till you have a thick but pourable consistency. Then mix in all the spices, salt and sugar.

Keep the appe pan or Paniyaram Chetty to heat. Grease with ghee all over.

Then mix baking soda, ghee, and a tablespoon of water into the batter, and whisk well. Add spoonfuls of mix to the molds. Sprinkle some ghee on each cup. Then cover and cook till the base is golden.

Flip with a wooden stick or fork. Coo the tops too till golden. Then transfer to a cloth-lined hot box.
Serve with coconut chutney/ spiced yogurt or good old tomato ketchup. Enjoy a healthy breakfast!
