Cook undon noodles.
Bring pot of water to boil and add fresh noodles. Let noodles boil in water until cooked and separated. You may need to help noodles separate using fork to gently separate the noodles. This may take around 10 minutes. You will know they are done they are soft and chewy to taste. Once noodles are done, drain and rinse under cold water...set aside. - 2
Add the hoisen, sesame oil, dark soy, broth, garlic and ginger in small bowl and mix with whisk or fork. Set aside.

Heat tbs oil in pan over medium high heat. Add vegetables and saute to your tenderness. Add spices and toss for another 1 minute.

Add the sauce mixture to veggies in pan. Mix well and add noodles. Add green onions for garnish.
