Mushroom and Curry Risotto

As a risotto lover, I had to try this recipe made with just a few simple ingredients. It has a delicate flavor, and the risotto turns out perfectly creamy and delicious.

Heat 2 tablespoons of extra virgin olive oil in a pot. Add the mushrooms and cook for a few minutes until almost done. Add the rice and toast it, stirring, until it becomes almost translucent. Add the water and continue cooking.

After about 5 minutes of cooking the rice, add salt, red pepper flakes, and curry powder. Continue cooking until the rice is almost done, then add the cheese, cut into small cubes, and stir well until creamy.

Serve the risotto on plates and garnish with a sprinkle of red pepper flakes.
