Ingredients

  1. 1 cupbasmati rice
  2. 1 tablespoonMandi spice
  3. 1 1/2 cupwater
  4. Green chillies
  5. 4bayleaf
  6. 1big onion (diced)
  7. 2 teaspoonraisins
  8. Pistachios
  9. 2 tablespoonoil
  10. Pinchsalt
  11. 1/2 teaspoonsaffron
  12. 1 tablespoonturmeric powder
  13. 5cardamom
  14. 1/2 teaspoonginger powder
  15. 1/2 teaspoononion powder
  16. garnishing
  17. Parsley
  18. sliceLime
  19. smoking
  20. Coal
  21. Foil paper

Steps

  1. 1

    Wash and soak the rice for an hour and half,on low heat place pot and heat up oil add onion and stir till very brown, add bayleaf, ginger and onion powder and stir.

    Add green chillies,Mandi spice,pour water and stir,add the drained and soaked rice, crushed pistachios, raisins, remaining spices, seasoning and salt and stir.Allow to cook for 10-15 minutes.

    When water is drained,place foil paper in the middle of the rice and gently place heated coal and pour little oil over the coal to get the Smoky flavour.

    Close the pot and allow the smoke to penetrate for 2-3 minutes.turn off the heat and remove coal and foul.place Mandi rice on a clean plate and garnish with parsley and lime slices

    Note: using raisins and nuts are totally optional.
