One of my favourite soups. It's ideal for winter and easy to prepare.
Steps

Take a big pot and pour some olive oil.

Chop the onion and put it to add it into the pot when the oil already heated.

After some minutes, add tomato paste and mix everything well. Add some salt and pepper on this step.

Then peel the carrot skin and chop into small pieces (like cubes).

After 5 minutes on medium heat, add carrots into the pot and mix well.

Wash throughly red lentils and add them to the pot after 6-10 minutes.

Add boiling water just slightly more than the lentils. From time to time mix everything. Lentils should be softer. In this stage you can also add garlic powder by preference.

Meanwhile, wash mints and dry. Cut them (removing branches in advance) into small pieces

You also can add more slightly more water from time to time because lentils absorb all water from (Step 7).

Add mint and mix everything. It should looks like this. Turn the heating off and wait additional 10 minutes. Ready!
