Cut eggplant and pepper into strips. Onions in half rings.

Fry the eggplant in vegetable oil first, not for long.
На растительном масле обжарить сначала баклажаны, не долго, только чтобы "схватились".

Add onion. Mix. Salt. Simmer together for 5-7 minutes, until the desired state of the onion. I like the onions to be a little crunchy.

Add sweet pepper. Mix. Simmer everything together for another 5-7 minutes.

Pour in the tomato, or sliced tomatoes in their own juice. I have some Italian, canned food.

Simmer everything together for about 5 minutes. Taste for salt. Add chopped garlic and parsley. Mix. Remove from fire.
Потушить всё вместе минут 5. Попробовать на соль. Добавить измельчённый чеснок и петрушку. Перемешать. Снять с огня.

You can cook this dish faster or slower. It all depends on what kind of vegetables you like.
