This is our simple Isaan-style grilled fish dip, which pairs well with various vegetables.

Clean the fish thoroughly. Boil water and add the fish along with the fermented fish sauce. Once the fish is cooked, remove it and let it cool.

In a pan, roast the chilies, shallots, and garlic until slightly charred. If using a charcoal grill, skewer and grill them for a smoky flavor.

Pound the roasted chilies, shallots, and garlic until fine. Flake the fish meat and add it to the mixture, pounding until smooth. Transfer to a bowl and season with MSG and the boiled fermented fish sauce, mixing well.

Garnish with chopped cilantro and serve with fresh vegetables of your choice.
