Preheat oven to 180°c, line three baking tray with baking paper and keep aside.

In a mixing bowl 🥣 add, butter, caster sugar, brown sugar, vanilla extract and beat well until pale and creamy, add one egg🥚at time, beat well until combined, add second egg🥚beat well until combined

Add red food colour mix gently, sift over self-raising flour, plain flour and cocoa powder, use a flat bladed knife in a cutting motion to mix until just combined, bring together in a bowl (the Dough will be very soft) and set aside for 5 mins to rest.

Place the icing sugar in a plate, roll 1 tbsp of the mixture into balls, roll balls in icing sugar until coated,place on prepared trays, allowing room for spreading, use the back of a 🥄 spoon to press down gently.

Bake in the oven for 8 mins or until cracked and just firm, set aside on trays for 3 mins to cool slightly before transferring to a wire rack to cool completely and serve
