Ingredients

  • 1large potato, skin on
  • I sour sliced and cored granny smith apple for decoration on top
  • 1sour chunked and cored granny smith apple
  • 1sweet chunked and cored red apple
  • 1sweet sliced and cored red apple for decoration on top
  • 1red, yellow or white onion, chunked
  • 1/4 poundcooked ham, pork steak trim, or bacon
  • 4 Tbsbuttermilk
  • 2 Tbsunsalted butter
  • 1 tspcinnamon
  • 1 tspblack pepper
  • 1 tspnutmeg
  • Flaked seasalt served on the side
  • Equipment: dutch oven, potato masher, cast iron skillet, mandolin for slicing, apple corer
  • Cost: apples 75 cents, potato 50 cents, onion 25 cents, ham or bacon 50 cents, dinner 67 cents per person, 17 cents if garden grown

    Scrub and dice potato; peel and dice onion; boil 15 minutes together, drain.

    With potato and onion boiling, core and quarter one sour and one sweet apple, bake in cast iron skillet in Tbs unsalted butter with pork, chopped ham or bacon till peels are soft and apples caramelized, 5 minutes. Mash with boiled potato and onion, while adding buttermilk till creamy. Smells delicious!

    Top with layers of 1/8 th inch unpeeled red and white apple slices. Slide dutch oven in preheated oven, bake till apples turn golden, about 10 minutes at 350F degrees. Sprinkle nutmeg, cinnamon and black pepper on top, serve with flaked seasalt on the side. Enjoy.
