Mushroom and ridge gourd in mustard paste

Cut the mushroom into pieces then wash it properly. In a bowl add mustard seeds, cumin seeds, 5-6 pods of garlic, and whole dry red chilies. Add water to soak for 1/2 hr. Then in a grinder make a smooth paste.

In a kadhai add 1 tbsp of oil then add mushroom and saute by adding some salt and turmeric powder for 5-10 minutes. Then peel the ridge gourds, wash them, and cut them into pieces.

Now transfer the sauteed mushrooms to a plate. Now add 2 tbsp of oil. heat it. Then add panch phoran, sliced onion, and chopped green chili. saute for a min. Now add cut ridge gourd, add salt and turmeric powder, and Kashmiri red chili powder. Saute for 5-7 mins. Now add sauteed mushrooms. Mix well. Now add previously made mustard paste. Mix well.

Now add chopped tomato. Mix well. Cook for 15-20 minutes by adjusting the gas flame. Adjust the flame from low to medium.

Add water if needed. Otherwise, skip it.

At last add freshly chopped coriander leaves. Mix well. Switch the flame.

Transfer to a serving plate and serve with hot steamed rice.
