Ingredients

30 minutes
2 servings
  • 12-15sheem (flat beans) cut into 1"pieces
  • 2potatoes peeled and diced
  • 5garlic cloves minced
  • 1onion chopped finely
  • 1 small tomato chopped
  • 1/4th tsp paanch phoron
  • 1/2 tspdry roasted masala (cumin,coriander,1 dry red chilli)
  • 1/4 th tsp turmeric powder
  • 1/4 th tsp red chilli powder
  • 1green chilli slit + 1 dry red chilli
  • 1/4th tsp asafoetida
  • 2 tbspoil
  • As neededsalt and sugar to taste
  • 1 tbspcoriander chopped

    Peel and chop the potato into small cubes. Chop off the tip and remove threads if any by the side of sheem.Chop into 1" pieces. Heat mustard oil in a pan. Smear salt and lightly fry the potatoes.Set aside.

    Sprinkle paanch phoron (a mix of cumin,kalonji,fennel, fenugreek,radhuni) and 1 broken dry red chili. When they crackle, add garlic and saute till aromatic.Add chopped onion and fry till translucent.Then sprinkle asafoetida. Saute and add deseeded and chopped tomato. Sprinkle 1/4 th tsp salt and fry till tomato is soft. Add the potatoes and flat beans and fry in low flame. Add turmeric, red chili powder, salt (as needed), and 1/4 th tsp sugar to taste. Toss all to combine.

    Add 1/2 cup water and cook covered in medium flame till water evaporates. Sprinkle 1 tsp bhaja masala (dry roasted and ground 1 tsp coriander, cumin, and dry red chili). Give it a nice mix and garnish with chopped coriander. Serve hot as a side dish with roti, paratha or with steamed rice.
