Tonight I didn’t have enough all-purpose flour to make pizza dough, so I mixed it with semolina flour and the result was great... it works! 😉

Tonight I didn’t have enough all-purpose flour to make pizza dough, so I mixed it with semolina flour and the result was great... it works! 😉

Mix the two flours together and pour them onto a work surface, forming a well in the center. Dissolve the yeast and sugar in the water. Let the yeast activate for about 10 minutes, then slowly pour the water into the well, mixing with a fork to incorporate the flour.

Add the olive oil and salt, then start kneading by hand until the dough is smooth and no longer sticks to your hands. At this point, add more water or flour if needed to get the right consistency.

Place the dough ball in a large floured bowl, cover with plastic wrap, and let it rise in a warm place (the oven turned off with the light on works well) for at least two hours, or until doubled in size.

Preheat the oven to 400–480°F (200–250°C). Meanwhile, spread the dough out on a baking sheet lined with parchment paper, add your favorite toppings, and bake for about 20 minutes.
