Take 1 cup water in a vessel,add little bit turmeric powder and 1/2tsp salt then Blanch cauliflower florets in this water for 4-5 minutes.turn off the flame and strain it.

Heat mustard oil in a heavy bottom kadhai,add cumin seeds, fenugreek seeds and asafoetida. When it start crackled add slit green chillies and curry leaves

Add chopped onion and saute until onion turn light brown.add ginger garlic paste saute 1 minute. Add chopped tomatoes

Add salt and all powder spices.mix and cook for 2 minutes.add 1tbsp water and cover.cook over medium flame for 3-4 minutes or until tomatoes turn soft.

Add cauliflower florets and potatoes stir and mix with spices add 1/2cup water.cover and cook for 8-10 minutes on low flame or until cauliflower and potatoes turn soft. Stir occasionally.

Remove the lid cook the sabzi on high flame for 2 minutes. Switch off the flame. Now it's ready.dish out and served with paratha or roti.
