Dry roast, coriander seeds, cumin seeds, fennel seeds,black pepper corns, yellow mustard seeds/ mustard seeds, dried red chillies 🌶️, bay leaves 🍂, for a few mins, until very fragant.

Be careful not to scorch the spices or they will be bitter, let the roasted spices cool completely, take a small grinder and add spices along with the remaining ingredients, turmeric powder, ground ginger, garlic powder, ground cinnamon, salt and grind until you get a fine powder.

Store the curry powder in a air tight container/ jar, keep in cool dry place, it's safe to keep for a month but for best flavor use within a few weeks.
