First cut the lau into very small pieces, Keep aside. Heat mustard oil in a kadai and fry the lentil dumplings and keep aside.

Now add mustard seeds, methi seeds and bay leaves and saute few seconds then add ginger paste and cook then add chopped lau/ bottle gourd, salt cover and cook some times.

When bottle gourd pieces cooked properly

Then add milk cover and cook.

Now add fried dumplings and mix properly and stir and cook on low flame, turn off the flame, cover and rest.

Lau Shukto is ready to serve with steam rice.
