Paddy Straw Mushroom is highly nutritious and delicious too. It's cultivated in Asia countries. In my village, Odisha women have learnt and cultivated, this mushroom from October to January, each year. This mushroom can be cooked as such with masala or with winter veggies or simply stir fry.

Paddy Straw Mushroom is highly nutritious and delicious too. It's cultivated in Asia countries. In my village, Odisha women have learnt and cultivated, this mushroom from October to January, each year. This mushroom can be cooked as such with masala or with winter veggies or simply stir fry.
Steps

Clean, wash and dry the mushroom. Chop the large ones.

Heat 1 Tbsp oil and fry the mushroom, till three fourth done.. Set aside.

Heat rest oil, add ponch phutane and allow to crackle. Then add chopped onions and fry golden brown, with green chillies.

Add onion masala paste and cook with tomatoes till oil separate from masala.

Now add coriander powder, cumin powder, red chilli powder and garam masala powder.

Cook till aromatic and done. Now mix the boiled peas, potatoes and papaya straw mushroom. Mix well. Add water and cook covered for 2 minutes. Garnish with chopped coriander leaves and serve.
