It is a dry eggplant preparation from Kolkata but even in Gujarat we make it with little changes in spices. We call it Paleta. It tastes really good served with roti, dal and rice.

It is a dry eggplant preparation from Kolkata but even in Gujarat we make it with little changes in spices. We call it Paleta. It tastes really good served with roti, dal and rice.

First of all wash and pat dry the eggplant. Now cut it into medium thick slices.

Add ginger, garlic, green chilli paste, turmeric, chilli powder, coriander cumin powder, garam masala, salt and oil in a bowl and mix everything well. Coat each slice with the spice mix.

Heat some oil in a pan and arrange a few slices in the pan. Cook it on medium to high heat until golden brown from one side then add some oil on top and flip it over. Cook it again until golden brown from the other side also. Take it out in a bowl and sprinkle some coriander leaves and fresh garlic on top. Repeat with the remaining slices.

Serve begun bhaja / paleta along with roti, dal and rice.
