Matar kachori is a spicy deep fried Indian snack which is popular in Delhi, You.P., Rajasthan and Gujarat. Various kachoris like Khasta Kachori, Daal Kachori, Pyaz Kachori, Matar Kachori, Pigeon peas Kachori are more popular. Kachori with dry spices are also popular as well. It is believed that Kachoris were originated from Rajsthan or You.P. It is similarly popular to Samosa.
Kachoris are served with dates, tamarind chutney, green chutney etc. Matar Kachori is served with potato curry also.

Ingredients

40 minutes
6 pieces
  • For dough:
  • 1 cupall-purpose flour
  • 1 tspsemolina
  • 1 tspcarom seeds
  • 3 tbspghee
  • as per requirementSalt to taste
  • For stuffing:
  • 1 cupgreen peas
  • 2green chillies
  • 1small piece ginger
  • 1/2 tspcumin seeds
  • 1/2 tspred chilli powder
  • 1/4 tspturmeric powder
  • 1/4 tspcoriander powder
  • 1/4 tspgaram masala
  • 1/4 tspaamchur powder
  • 1/2 tsproughly grounded fennel seeds
  • 2 tspoil
  • 2 tbspfinely chopped coriander
  • 2 tspoil
  • Other ingredients:
  • as requiredOil for frying

Steps

    In a large broad vessel mix all the ingredients of dough and crumble well then add water and knead medium dough, cover and let it rest for 15-20 minutes.

    To prepare stuffing, firstly make coarse paste of green peas, green chillies and ginger.

    Then heat oil, add cumin seeds and let them splutter. Add all dry spices and saute for a few seconds on low flame.

    Add prepared coarse paste and salt. Mix with spices properly and cook for 2-3 minutes. Lastly add coriander,mix well and turn off the heat.

    Now knead the dough for 2-3 minutes and divide in equal parts. Take one and roll it.

    Put spoonful of stuffing in centre. Gather all sides to centre and seal it. Roll it little.

    In pre heated oil,deep fry kachoris on a slow flame from both sides.

    Serve hot.
