Aloo Gobi Matar (Potato, Cauliflower, and Pea Curry)

Cut the cauliflower into florets and boil them in hot water with salt.

Heat 1 tablespoon oil in a pan, add the cauliflower and potatoes, and sauté them. Set aside on a plate.

Heat oil in a skillet. When hot, add cumin seeds and bay leaves. Sauté, then add onions and cook until lightly golden. Add all the spices and sauté well.

Once the spices are cooked, add the potatoes, cauliflower, and peas. Sauté, then add a little water and cook until the peas are soft.

When the cauliflower and potatoes are cooked, add chopped cilantro leaves. Serve the curry hot with your choice of roti or rice.
