Ingredients

  1. 1# starchy potatoes
  2. 1/8 teaspoonbaking soda
  3. 1/8 teaspoonsgarlic powder
  4. 1/4 teaspoonskosher salt
  5. 1/8 teaspoonsmushroom umami (trader joe’s I think)

Cooking Instructions

    Grate potatoes and place them in a clean tea towel. Roll up the towel and squeeze out as much moisture as possible

    Heat 2 Tablespoons oil (I use EVOO) in a cast iron pan over medium heat

  3. 3

    Mix baking soda, salt, garlic, and any other seasoning desired.

    Once oil is hot, add potatoes in a thin layer across the whole pan. Cool 4-5 minutes

    Flip and cook for an additional 3-4 minutes
