Bloody Mary Granita with berry meringue

Ingredients

  1. 2 cansnon alcoholic Bloody Mary
  2. 6 tbspSugar
  3. 100 mlbrandy
  4. Meringue (I made my own but shop bought is fine)
  5. Mixed fresh berries

Cooking Instructions

  1. 1

    Place a tray into the freezer to give the granita a head start.
    Mix the tomato Bloody Mary and brandy together then add sugar.

  2. 2

    Pour onto the frozen tray and every half an hour drag a fork across the ice particles starting from the edges.

  3. 3

    Repeat 4 times until you have a crystallised granita.

  4. 4

    Crush the meringue with the berries and serve the granita with a dusting of icing sugar (Optional)
