Wash the vegetables, peel and cube them. Cut the Malabar spinach. In a wok heat mustard oil and add the Bori, fry and set aside

In the same wok add 1 Tbsp mustard oil more and Panch Phoron and Bay leaf, dry red chilli, add potatoes to fry following Sheem following pumpkin following Aubergine following Malabar spinach. Stir well. Cook covered for 3-4 mins

Add red chilli powder, turmeric powder, salt and stir well. Add slit green chilies and stir

Add water and add fried Boris, cook covered

Once all cooked, set aside

Plate and serve
