Quick stir-frying keeps the broccoli and green beans vibrant and brings out the natural sweetness of the vegetables.

Peel and devein the shrimp, then cut them in half lengthwise. Sauté garlic in a pan until fragrant, add the shrimp, stir briefly, then remove to a plate. Wash and cut the broccoli into small florets, cut the green beans into pieces, and slice the carrots thinly. Using the same pan, add more oil and sauté garlic, then stir-fry the carrots and green beans for a few moments. Add the broccoli and stir-fry over high heat, seasoning to taste.

Finally, return the shrimp to the pan and stir quickly to keep the vegetables bright green. Turn off the heat and sprinkle black pepper on top for extra flavor.
