Cowpea Beans Hari Pyaaz and Aloo Methi

In this particular variation, i have used Spring Onion Greens, Fenugreek Greens, Cowpea Beans and Potatoes. This simple recipe makes for an excellent Lunch idea with plain boiled Rice and Ghee. Known by various names, Cowpea Beans grows in any garden. Yard long beans, Asparagus beans, Chinese long beans and Snake beans are some other names this Vegetable is known by. They cook really quickly and are moist and crunchy at the same time and are rich in minerals like Magnesium , Copper , Calcium and Manganese.
As they get done so very quickly without much hassles, it's a go to dish of my folks especially during busy days. It makes for a complete meal that's healthy and nutritious. With any other Vegetable added to it, it becomes a great one pot dish for meals.
This one here is a simple stir fry with just a few handy spices that are easily available in any Indian pantry.

Ingredients

25-30 minutes
5 servings
  • 500 gmfresh Cowpea Beans
  • 2medium sized cubed Potatoes
  • 1 tspSalt
  • 1 tspGinger garlic chilli paste
  • 1 tspRed Chilli powder
  • 1/4 tspTurmeric powder
  • 1 tspCoriander powder roasted
  • 1 bunchchopped Spring Onions
  • 2 buncheschopped Fenugreek Greens
  • 2-3 tbspchopped Coriander Leaves
  • 2-3 tbspOil

Steps

25-30 minutes
  1. 1

    In a pan, heat oil and add the ginger-garlic chilli paste. Saute for a minute and add the chopped spring onion greens. Fry for a minute or two. Next add cowpea beans. Stir fry for about 2-3 minutes. Next, add the cubed potatoes. Saute until nicely done with all the powdered spices as well. Also don't forget to add chopped fenugreek greens.

    Cook until soft and done. Cover it up so that it retains the steam. It gets done pretty much soon. Keep stirring a bit every now and then so that it cooks well and doesn't burn or stick at the bottom. There is absolutely no need of any water at all. Let it cook in it's own juices.

    Garnish with lots of chopped coriander leaves. Serve hot as a side dish to your favourite meal. This is a lovely combination and tastes yum with both Rice and Rotis. Yum!
