Ingredients

  1. 1 Poundbeef chuck cut in 1” cubes
  2. 1 Bottledark beer
  3. 1onion
  4. 1carrot
  5. 1 Tbsbutter
  6. 1 Tbscorn starch, tsp mustard powder, 2 Tbs vinegar
  7. 2Laurel leaves, 4 cloves
  8. Salt, pepper to taste
  9. Equipment: cast iron skillet with lid
  10. Cost: beef $3, beer $1, other $1, $2 per dinner

Cooking Instructions

    Braise the beef cubes in Tbs butter, tsp pepper and tsp salt, lift meat and set aside on platter when browned on all sides.

    Glaze the chopped onions and carrots in the braised beef juices till they release their juices and turn sweet.

    Add beef back to skillet with onions and carrots, add half a bottle of dark beer, add tsp mustard powder, 2 Tbs vinegar, 2 laurel leaves, 4 cloves, lid on, medium heat, simmer 1 hour. Add splash of beer every half hour or when skillet sauce starts turning dry.

    After 1 hour, add Tbs cornstarch dissolved in 2 Tbs cold water to thicken the sauce to gravy.

    Serve with handcut french fries served on the side.
