Serves 6 servings

2/3 cupchopped onion (about 80 grams)
1 1/3 cupscarrots, cut into chunks (about 200 grams)
4 cupspeeled zucchini, cut into chunks (about 600 grams)
2 1/2 cupswater (about 600 grams)
1beef bouillon cube
2 pinchessalt
2 pinchesblack pepper
4 cubescreamy cheese (such as Laughing Cow or cream cheese, about 80 grams total)

Add the onion, carrots, zucchini, water, bouillon cube, salt, and pepper to a pot. Cook over medium heat for 25 minutes.

Add the cheese and blend everything until smooth.

Serve with croutons for extra flavor.
