Pressure cook all vegetable except Onion, Spring Onion, Capsicum and Tomato.

In a moderately heated pan, add butter, add cumin seeds and allow to crackle, then add chopped onion + green chilli and sauté till translucent. Now add ginger garlic paste and sauté till rawness goes off.

Add spring onion + capsicum and sauté for 3-4 minutes.

Now add chopped tomatoes + salt and sauté for 2-3 minutes.

Add the boiled vegetables, add pav bhaji masala + salt as required + red chilli powder + turmeric powder and sauté for 4-5 minutes and mash the vegetables.

Add chopped coriander and mix well, cook further for 2-3 minute, add warm water as per required consistency.

Switch off flame, add lemon juice, and mix well. Pav Bhaji is done.

Toast pav in sufficient butter by adding pav bhaji masala, toast nicely, and serve with bhaji along with finely chopped onion and lemon pieces.
