Chinese Inspired Chicken Broth (Using Leftover Carcass)

I often make this delicious fragrant Chinese Inspired broth using left over chicken carcass from a roast dinner. I then like to add meat, veg & noodles to create a tasty soup bowl. So tasty!
Note: Here (shown in image) I've added twice cooked pork, mange tout, spring onions & chilli & garlic crunch plus egg noodles.

Add all the listed ingredients into a large lidded saucepan. Bring to a gentle boil and cook for 20 minutes.

Turn down the heat to medium-low and a gentle simmer. Simmer with a lid on for around 1-2 hours until all the flavours have created a beautiful delicate broth.

Using a slotted spoon, remove all the bones/veg and discard. Then pour the broth through a mesh sieve to remove any small debris that remains. You are then left with a tasty chicken broth.
