Assemble ingredients.

In pan add tbsp oil, add ginger + green chilli, sauté for few seconds then add carrot, beetroot and sauté for 3-4 minutes. Veggies will shrink.

Add capsicum and sauté for 2-3 minutes

Add boiled green peas, add garam masala + red chilli powder + salt as required and sauté for 4 - 5 minutes, sprinkle little water and let veggies cook nicely. Let it cool and discard the slit green chilli.

Mixture is ready.

Mash potatoes, add the prepared mixture + fresh bread crumbs and mix well.

Give shape of cutlets. Prepare a slurry of Maida + water + salt + red chilli powder and dip cutlets into it and then coat all over with bread crumbs. Refrigerate for 8-10 minutes.

Now in pan add oil, put cutlets in moderate heated oil and fry till golden brown and fry the other side too.

Cutlets is ready to serve. Garnish with rock salt and serve hot n crispy.

Pair with tea / coffee and enjoy chilled winter evening.
