Tomato-Beetroot Soup

Boil beets in water over medium-high heat until soft. Drain the water and let the beet cool.

Chopped tomatoes, and remove the seeds. Add the tomatoes to the mixer along with the boiled beets and make a smooth puree.

Add 1 teaspoon of ghee to the pan. Add garlic and curry leaves and cook for just a few seconds.

Add tomatoes and beet puree. Cover and let it simmer on low/medium heat for 3-4 minutes. Stir occasionally.

Add salt and black pepper. Add water to adjust consistency. Simmer for 2 minutes and your soup is ready.

Serve in a serving bowl immediately and enjoy it hot.
