Ingredients

5 minutes
Serves 3-4 servings
  • 1 lb (2 oz)Roma tomatoes (about 500 grams)
  • 1-2garlic cloves
  • 2 1/2 ozday-old bread (about 2/3 cup or 60-70 grams)
  • 1 tablespoonwhite vinegar
  • 1/4 cupextra virgin olive oil (60 ml)
  • Salt, to taste

Steps

5 minutes
  1. 1

    Blend the tomatoes well in a blender for 1 minute.

    Add the bread, garlic, vinegar, and salt. Blend for a few seconds.

    With the blender running, slowly drizzle in the olive oil so the salmorejo emulsifies. Done!
